I find that whenever I'm busy, my mind develops a subconscious preference for bite-sized, encapsulated chunks of entertainment over media that takes longer to enjoy. The busier I get, the more pronounced the effect.

I ain't the most avid book-reader, but I suppose I might as well throw my hat in the ring. Something to keep in mind, though: I mostly prefer comedies and other works that don't take themselves too seriously, so my tastes might not align with yours.
Here's what the Hitchhiker's Guide to the Galaxy says about The Hitchhiker's Guide to the Galaxy: It's fucking awesome. More specifically, it's a hilariously-absurd romp everyone owes it to themselves to read at least once. Douglas Adams nestles in a joke practically every other page, constantly subverting the reader's expectations. And the sequel, Restaurant at the End of the Universe, is just as good.
On other hand, Treasure Island remains my favorite novel of all time. Much like the rest of Stevenson's work, its prose is a perfect combination of lush descriptions and flowing action. Especially if you've seen film versions of it beforehand, the genuine article really lets your imagination run wild. All in all, the perfect adventure story. And if you like his writing style, I'd also check out Dr. Jekyll and Mr. Hyde. But for god's sake, please don't try to read Kidnapped. Literally half the book is in Scots. Or The Black Arrow, whose dialogue can only be succinctly described as that of medieval hillbillies. @-@;
Around the World in 80 Days is classic adventure, and is IMHO a score better than 20,000 Leagues and Journey to the Center of the Earth. I'd definitely read this one in the summer rather than the winter.
And, lastly, if you want some Dickens, see if you can get a hand on The Mudfog Papers. It's the short story of a shitty English town with a shitty English mayor who's completely and utterly incompetent at everything he does. Hilarity ensues.

I don't really have any preference when it comes to this sort of thing probably because I haven't really read any one type of genre and I like some variety now and then. So most things are fine with me. I appreciate all the suggestions you've made and I'll look into them.
I'll also look into those trilogies that were recommended.
In any case I'll head to a book store or two in the days to come and see if I can find what has been suggested here and any other books that I might find interesting. Thanks for the suggestions everyone!

Ah, The Book Thief. One of my assignments in school was to make a soundtrack for it; mostly taken from The Big O, with samples from Ace Combat 6 and Republic: The Revolution; and a damn good one, if I do say so myself. To this day, reading through that book with my own handpicked musical accompaniment remains one of my fondest memories of high school.

I've actually got the entire original series as an omnibus. IIRC, I made it through about a third of So Long, and Thanks for All the Fish before I got bored. Probably for the best, as I hear Mostly Harmless ended on a real downer.

Yeah, it took me several tries to get through So Long, and Thanks for All the Fish in its entirety and I don't remember much about it besides the floating restaurant and the Krikkiters. And as for Mostly Harmless' ending Douglas reportedly wrote it while he was in a bad mood, which explains some things.
